Jelly Bean Confetti Cake Recipe
Ingredients:
1 1/2 teaspoons baking powder
1 cup granulated sugar
1 cup soft butter or margarine
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
3 eggs
3/4 cup miniature jelly beans, cut in half (no licorice)
8 ounces cream cheese, softened
Confectioners sugar
Instructions:
Preheat oven to 325 F. A 12-cup fluted tube pan/ angel cake pan should be well greased and floured. Toss the jelly beans in flour (2 tablespoons).
Beat the butter, the sugar, the cream cheese and the vanilla extract until blended. Then, add the eggs one by one and mix well. Sift the remaining flour, the baking powder and the salt and add to the mixture, blending well.
Pour one cup of the batter in the pan. In the rest of the batter, add the jelly beans and stir. Then, pour in the pan and bake for 50 minutes to 1 hour or until a cake tester inserted in the middle of the cake comes out clean.
Decorate with confectioners sugar.
