Perfect Sponge Cake Recipe
Ingredients:
1 1/2 cups granulated sugar
1 1/4 cups sifted cake flour
1 teaspoon vanilla extract
1/3 cup cold orange juice
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 teaspoon cream of tartar
6 eggs
Instructions:
Preheat oven to 325 F. In a bowl, put the flour with the baking and sift.
Mix the eggs whites in a bowl until fluffy then add in the cream of tartar and beat for about 3 minutes. Add cup of sugar and continue beating until a smooth, satiny meringue. Put the yolks in another recipient and add in the rest of the sugar, the salt, the vanilla extract and continue beating until creamy mixture.
Put in the flour and fold. Pour it into the meringue and fold until the white dissolves. Pour into A tube pan ( do not grease) and bake for 1 hour 15 minutes.
Decorate with confectioners sugar or pineapple glaze.
Ingredients:
Pineapple Glaze
1 1/4 cups confectioners’ sugar
1 egg yolk
2 tablespoons butter
2 tablespoons pineapple juice
3 tablespoons crushed pineapple, drained
Rind of 1/2 small lemon, grated
Instructions;
In a saucepan, melt the butter. In a mixing bowl, with an electric whisk (high speed), beat the egg yolk for 1 minute. Then pour in the melted butter, the crushed pineapple and its juice, the lemon rind and the confectioners sugar.
Mix for 2 minutes (low speed) and pour on the cake, allowing to drizzle down sides.
