Applesauce Carrot Cake Recipe
Ingredients:
1 1/2 cups firmly packed brown sugar
1 1/2 cups whole wheat flour
1 1/2 teaspoons ground allspice
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 cup chopped walnuts
1 cup granulated sugar
1 cup raisins
1 tablespoon baking soda
2 1/4 cups applesauce
2 eggs
3 cups all-purpose flour
3/4 cup butter or margarine, softened
3/4 cup shredded carrots
Instructions:
Beat the butter in a bowl with an electric whisk. Then, beat in the sugar well(added gradually). Add the eggs and beat well one after the other.
Put the carrots in the applesauce and stir. Mix the flour, soda and spices and add to the creamed mixture alternately with the applesauce mixture while beginning and ending with the flour mixture, mixing well. Add in the walnuts and raisins.
Grease and flour a 10-inch tube pan. Pour in the mixture and bake at 350 F for 1hour and 20-25 minutes. Then, allow the pan to cool on a wire rack for 10 minutes. Remove the cake from the pan and allow cooling once more.
