Cranberry Sauce Cake Recipe
Ingredients:
1 (16 ounce) can cranberry sauce
1 cup chopped pecans
1 cup granulated sugar
1 cup mayonnaise or salad dressing
1/2 cup orange juice
2 teaspoons salt
3 cups all-purpose flour
Grated rind of one orange
Grease a 9×3 – inch tube pan and line the bottom with wax paper. Set aside 1/4 cup cranberry sauce for frosting.
Put all the dry ingredients in a mixing bowl and sift. Pour in the remaining cranberry sauce with the nuts, the orange rind and the mayonnaise. Mix well and pour in the orange juice.
Bake at 350 F for 1 hour 15 minutes.

Cranberry Frosting
1/4 cup reserved cranberry sauce
2 cups unsifted confectioners’ sugar
3 tablespoons margarine
Instructions:
In a bowl, beat all the ingredients until a smooth result then pour on the cake.
