Orange Almond Cake Recipe
Ingredients:
1 cup all-purpose, bleached flour
1 cup plus 2 tablespoons granulated sugar
1 cup whole blanched almonds, toasted*
1 tablespoon baking powder
1/2 cup extra virgin olive oil
1/2 cup fresh, strained orange juice
1/8 teaspoon fine sea salt
4 large eggs, room temperature
Olive oil to prepare pan
Rind of 1 orange, finely grated
Orange Juice Soak
1/2 cup strained orange juice
1/4 cup granulated sugar
Instructions:
Preheat oven to 350 F. Grease a 9-inch spring form pan with olive oil. Crush the almonds.
In a bowl, beat the flour, the baking powder and the salt. In another one, beat the eggs with an electric mixer (medium speed) and add the sugar and the lemon-colored. Then add the flour mixture, the orange rind, the olive oil and blend (low speed).
Bake for 45-50 minutes or until cake test is done. Then make holes with a fork on the cake and pour the 1/2 cup orange juice and 1/4 cup sugar (mixed together). The cake can keep for up to three days.
*To toast almonds, put in a pan and bake to 350 F oven for 5-7 minutes/golden brown.
Note: After being removed from the oven, the almonds will continue to brown slightly.
