Applesauce Loaf Cake
Applesauce Loaf Cake Recipe:
Ingredients:
1 1/2 cups unsweetened applesauce
1 cup granulated sugar
1 cup raisins
1 heaping tablespoon cocoa powder
1 teaspoon cinnamon
1/2 cup black walnuts, chopped
1/2 cup lard
1/2 teaspoon ground allspice
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 cups flour
2 teaspoons baking soda
Instructions:
In a saucepan, heat the applesauce and add the lard, stirring until it melts. Add the raisins and the baking soda and allow cooling. Mix in the flour, salt, spices and fold in the nut meats.
Bake the mixture in a greased large loaf pan at 350 F for 45 minutes to 1 hour. Then allow cooling and frost with the caramel frosting.
Ingredients:
Caramel Frosting
1 cup confectioners’ sugar
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
1/4 cup butter
1/4 cup milk
Instructions:
In the microwave, boil the brown sugar, butter and milk for 3 minutes. Allow to cool until just warm. Then, beat in the confectioners sugar and vanilla extract until smooth. It the result is too stiff, pour in a little milk.
