German Chocolate Bundt Cake Recipe
Ingredients:
Streusel
1/2 cup packed brown sugar
1/3 cup chopped pecans
1/3 cup flaked sweetened coconut
1/4 cup flour
2 tablespoons cold butter, cut into small pieces
Cake
1 1/2 cups granulated sugar
1 cup low-fat buttermilk
1 ounce German baking chocolate
1 tablespoon granulated sugar
1/2 cup boiling water
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup butter, softened
2 cups flour
2 egg whites
2 teaspoons baking powder
2 teaspoons vanilla extract
Cooking spray
Glaze
1 cup powdered sugar
1 tablespoon butter, melted
4 teaspoons fat-free milk
Instructions:
For Cake: Preheat oven to 325 F. A bundt pan of 12-inch should be coated with cooking spray and sprinkled with 1 tablespoon of confectioners sugar. In a bowl, put the cocoa, the baking chocolate and the boiling water and stir.
Put the flour, the baking soda, the baking powder and the salt together. Blend 1 cups of sugar and butter for about 5 minutes. Then add the egg whites and the vanilla extract and mix well.
Add the flour mixture to the sugar one alternately with buttermilk (start and finish with the flour mixture). Put in the cocoa mixture and fill the pan with half of the mixture. Put streusel on it and pour remaining mixture on it.
Bake for 1 hour, or until a wooden pick inserted in the middle comes out clean. Allow to cool for 10 minutes then remover the cake from the pan.
For Glaze: In a bowl, put the butter, the sugar and the milk and stir with an electric mixer. Then pour on the cake.
