Doctor Bird Cake
Doctor Bird Cake Recipe:
Ingredients:
1 (8 ounce) can crushed pineapple with juice
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla extract
1 cup chopped pecans (optional)
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
2 cups diced ripe bananas
2 cups granulated sugar
3 cups sifted flour
3 eggs
Instructions:
Put all the dry ingredients in a mixing bowl. Then, add in the bananas with the oil, the vanilla extract, the eggs and the pineapple (crushed with juice). Stir, but do not beat.
Grease a 9-inch tube pan and fill it with the mixture. Bake at 350 F for about 1 hour 20 minutes. Allow to cool on a rack without removing the cake from the pan.
