Marmalade Cake Recipe
Ingredients
Cake
1 cup hot strong tea
1 cup packed brown sugar
1/2 cup chopped walnuts
1/2 cup unsalted butter, softened
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 cup tart marmalade
2 cups all-purpose flour
2 cups mixed dried or candied fruit, such as
2 teaspoons baking powder
3 eggs
3/4 cup chopped dried apricots, 1/4 cup
chopped citron and 1 cup dried currants
Pinch of salt
Instructions:
Preheat the oven to 250 F. Take 2-quart Charlotte mold, 7 inches in diameter and 4 1/2 inches deep, grease and flour it. Then line the bottom with wax paper.
In a bowl, pour hot tea and put the fruit in. In another one, with an electric mixer (medium speed), beat the butter and the brown sugar. Then add the eggs, one by one and beat well.
Mix in the marmalade. In a recipient, put the flour, the ginger, the nutmeg, the baking powder and the salt and sift. Add to the batter and beat (low speed).
Add the walnuts, the fruit-tea mixture and mix well. Pour in the mold and bake for 2 hours 30 minutes.

Marzipan Topping
1 (3 1/2 ounce) roll almond paste (marzipan)
Instructions:
Roll out the ingredient and put on the cake.

Marmalade Sauce
1 tablespoon orange juice
1/2 cup orange marmalade
Instructions:
Boil the marmalade and orange juice and stir. Pour around the cake. Use fresh orange blossoms and leaves (cut into slices) to decorate top of cake.
