Blackberry Cake and Caramel Frosting Recipe
Ingredients:
1 cup butter flavored Crisco
1 cup sour milk (1 cup sweet milk plus 1 tablespoon vinegar)
1 teaspoon allspice
1 teaspoon baking soda dissolved in half of milk
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 cup chopped nuts
1/2 teaspoon salt
2 cups granulated sugar
2 eggs
3/4 cup blackberries plus 1/4 cup juice
4 cups flour
Frosting
1 cup light brown sugar (firmly packed)
1 tablespoon butter
1 teaspoon vanilla extract
1/2 teaspoon salt
2 2/3 cups confectioners’ sugar, sifted
5 tablespoons canned milk (carnation)
Instructions:
In a mixing bowl, beat the crisco and the sugar. Then add the eggs, beating well. Sift the flour and the spices and add them to the mixture, alternately with milk.
Put in the berries, the juice and the nuts and fold gently. Bake at 350 F in a 10-inch tube pan for 1 hour 10 minutes or until a cake tester inserted in the cake comes out clean. Spread confectioners’ sugar
For the caramel frosting; In a saucepan, mix the brown sugar, the milk, the butter and the salt. Heat it to the boiling point while usually stirring.
Remove from the heat and allow cooling. Pour in vanilla and stir. Then add about 3 tablespoons of sugar and beat until smooth and creamy.
Spoon the frosting over the cake.
