Fresh Orange Bundt Cake Recipe
Ingredients:
1 cup Softasilk or refined cake flour
1 tablespoon fresh lemon juice
1/2 teaspoon finely grated orange peel
1/4 cup fresh orange juice
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
6 eggs, separated
Instructions:
A bundt pan/tube pan of 10-inch should be greased. Sift 1 cup of flour and add baking soda and the salt and sift for several times (4-5). In another recipient, beat the egg yolks first (until thick and lemon coloured) and then the sugar.
Mix in the orange rind, the lemon juice and the orange juice. In a bowl, beat the egg whites and pour in the egg yolk mixture. Fold and add the flour, little by little.
Mix and fill in the pan with the mixture. Bake at 350 F for 45 minutes. Then, allow cooling and glaze with confectioners sugar and 2 tablespoons of orange juice.
If the glaze is thick, add more orange juice in order to be able to pour over the cake.
