Black Forest Bundt Cake
Black Forest Bundt Cake Recipe:
Ingredients:
1 1/3 cups granulated sugar
1 1/4 teaspoons baking soda
1 2/3 cup buttermilk
1 cup lite cherry pie filling
1/2 teaspoon powdered sugar
1/3 cup unsweetened cocoa powder
1/4 cup vegetable oil
1/4 teaspoon pure almond extract
1/4 teaspoon salt
2 teaspoons pure vanilla extract
3 1/4 cups all-purpose flour
4 large egg whites
4 ounces sweet baking chocolate, melted
Vegetable cooking spray
Instructions:
Preheat the oven to 350 F. Using the cooking spray, coat a 10-inch bundt pan. Stir the almond extract in the pie filling and set aside.
Put 1 1/3 cups of the sugar and oil in a mixing bowl and beat well with an electric whisk at the medium speed. Beat in the melted chocolate and then the eggs whites. In another bowl, mix the sifted flour, the baking soda, the salt and the cocoa powder and add it to the sugar mixture alternately with the buttermilk, beginning and ending with the flour mixture, mixing well after each addition.
Pour in the vanilla extract and stir. Pour the batter in 2 cups and set them aside. Fill the bundt pan with the remaining mixture and pour the filling mixture in the batter making a ring shape and top it with reserved batter.
Bake at 350 F for 55 minutes or until cake tester inserted in the middle comes out clean. Allow to cool on a wire rack for 10 minutes and then remove from the pan. Allow to cool completely on the cooling rack and sprinkle with powdered sugar.
