Junior Mint Cheesecake Recipe
Ingredients:
1 graham cracker or chocolate crumb crust
1 teaspoon vanilla extract
2 (3 ounce) packages Junior Mints
2/3 cup granulated sugar
24 ounces cream cheese (at room temperature)
3 eggs
Instructions:
Freeze the mint and preheat the oven to 350 F. Beat the cheese and the sugar until smooth. Add the eggs one by one and beat well.
Pour in the vanilla extract and mix. Chop the mint and top the cheesecake. Bake for 40-45 minutes. Chill overnight.
