Banana Zucchini Cake
Banana Zucchini Cake Recipe:
Ingredients:
1 1/2 cups walnuts, chopped
1 1/2 cups zucchini, shredded
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 cup raisins
1 cup vegetable oil
1 medium-size ripe banana
1 teaspoon salt
2 cups granulated sugar
3 cups all-purpose flour
4 eggs (at room temperature)
Instructions:
Make a puree of the peeled banana in a blender to obtain 1 cup. In a mixing bowl, beat the eggs and add the sugar and the oil. Beat for one minute.
Then, add the puree and the zucchini and mix well. In another recipient, sift the flour, the soda, the baking powder, the cinnamon and the salt together. Pour in the mixture, add the walnuts and the raisins and fold.
Grease and four a 10-inch tube pan and pour the mixture in it. Bake at 350 F for about 1 hour or until a wooden pick inserted in center comes out clean. Then allow cooling for 20 minutes and remove the pan.
Sprinkle the top of the cake with confectioners’ sugar or frost with 1 small can pecan frosting.
