Banana Nut Cake

Ingredients:
1 teaspoon baking soda
1/2 cup butter or margarine, melted
1/4 teaspoon salt
2 1/4 cups all-purpose flour
2 cups mashed ripe bananas (about 6 medium bananas)
2 teaspoons baking powder
2 teaspoons cinnamon
2 teaspoons vanilla extract
3/4 cup chopped walnuts
3/4 cup thawed frozen unsweetened apple juice concentrate
3/4 cup uncooked rolled oats
4 eggs, beaten
Cream Cheese Glaze (see below)
Instructions:
Preheat oven at 350F. In a large mixing bowl, put all the ingredients, except the walnuts and cream cheese glaze. Mix them well.
Put in the walnuts and stir. Grease a bundt pan/tube pan and pour the mixture in it. Bake for 50-55 minutes or until cake tester inserted in the middle of the cake comes out clean.
Allow to cool for 15 minutes on a wire rack. Then, remove the pan and allow the cake to cool completely. For the cream cheese glaze, spread it over the cake, allowing it to drip down sides. To be served at room temperature or chilled.
Ingredients:
Cream Cheese Glaze
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
2 tablespoons thawed frozen unsweetened apple juice concentrate
3 ounces regular or reduced calorie cream cheese, softened
Instructions:
In a small bowl, beat all the ingredients until smooth.
